Black Tea

Black tea is produced from completely oxidized leaves, Black teas undergo complete oxidation. They are found in China, India, Sri Lanka and some African countries. The leaves first undergo withering, where they lose a significant amount of moisture, and then rolling, where the enzyme responsible for oxidation is released. They are then laid down in an environment where the temperature is around 20°C. The oxidation is stopped by heating the leaves (drying), which gives a richly colored mixture and a pronounced taste.
